Easy Egg Pasta Recipe

Ingredients:

  • 8 ounces pasta (spaghetti, linguine, or your favorite)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped (optional)
  • Red pepper flakes (optional, for a bit of heat)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. Prepare the Egg Mixture:

    • While the pasta is cooking, crack the eggs into a bowl and beat them with a fork. Add the grated Parmesan cheese and mix well. Set aside.
  3. Sauté the Garlic:

    • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Be careful not to let the garlic burn.
  4. Combine Pasta and Egg Mixture:

    • Add the drained pasta to the skillet with the garlic and toss to coat the pasta in the oil. Remove the skillet from the heat.
    • Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.
  5. Season and Serve:

    • Season with salt and pepper to taste. If using, sprinkle with red pepper flakes and chopped fresh parsley or basil.
    • Serve immediately with extra Parmesan cheese on the side.
