Easy Egg Pasta Recipe
Ingredients:
- 8 ounces pasta (spaghetti, linguine, or your favorite)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley or basil, chopped (optional)
- Red pepper flakes (optional, for a bit of heat)
Instructions:
Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
Prepare the Egg Mixture:
- While the pasta is cooking, crack the eggs into a bowl and beat them with a fork. Add the grated Parmesan cheese and mix well. Set aside.
Sauté the Garlic:
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes. Be careful not to let the garlic burn.
Combine Pasta and Egg Mixture:
- Add the drained pasta to the skillet with the garlic and toss to coat the pasta in the oil. Remove the skillet from the heat.
- Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.
Season and Serve:
- Season with salt and pepper to taste. If using, sprinkle with red pepper flakes and chopped fresh parsley or basil.
- Serve immediately with extra Parmesan cheese on the side.
