Dora cakes, also known as "dorayaki," are a popular Japanese confection that consists of two fluffy, pancake-like cakes filled with sweet red bean paste. They’re delicious and easy to make at home.

Ingredients:

For the Pancake Cakes:
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil (for cooking)
For the Filling:
  • 1 cup red bean paste (anko), store-bought or homemade

Instructions:

  1. Prepare the Batter:

    • In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In another bowl, beat the eggs, then mix in the milk and honey.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be smooth and slightly thick.
  2. Cook the Pancake Cakes:

    • Heat a non-stick skillet or griddle over medium-low heat and lightly brush with vegetable oil.
    • Pour about 2 tablespoons of batter onto the skillet to form a small pancake. Use the back of a spoon to spread it into a round shape.
    • Cook until bubbles appear on the surface and the edges look set, then flip and cook for another 1-2 minutes, or until golden brown. Repeat with the remaining batter.
  3. Cool the Pancakes:

    • Transfer the cooked pancakes to a wire rack and let them cool completely.
  4. Assemble the Dora Cakes:

    • Spread a generous amount of red bean paste on the flat side of one pancake.
    • Top with another pancake, flat side down, and gently press together to form a sandwich.
  5. Serve:

    • Serve the dora cakes at room temperature or slightly chilled.

  • Red Bean Paste: You can use store-bought red bean paste or make your own by simmering adzuki beans with sugar until they break down into a smooth paste.
