Dora Cakes Recipe

Ingredients:
For the Pancake Cakes:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar

Instructions:
Prepare the Batter:
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs, then mix in the milk and honey.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be smooth and slightly thick.
Cook the Pancake Cakes:
- Heat a non-stick skillet or griddle over medium-low heat and lightly brush with vegetable oil.
- Pour about 2 tablespoons of batter onto the skillet to form a small pancake. Use the back of a spoon to spread it into a round shape.
- Cook until bubbles appear on the surface and the edges look set, then flip and cook for another 1-2 minutes, or until golden brown. Repeat with the remaining batter.
Cool the Pancakes:
- Transfer the cooked pancakes to a wire rack and let them cool completely.
Assemble the Dora Cakes:
- Spread a generous amount of red bean paste on the flat side of one pancake.
- Top with another pancake, flat side down, and gently press together to form a sandwich.
Serve:
- Serve the dora cakes at room temperature or slightly chilled.
